A sweet and aromatic apple, Apricot and Sage Chutney from Richard Hunt.

  • 1.5kg Cooking Apples, peeled and chopped
  • 700gm Muscavado Sugar
  • 400gm Sultanas
  • 2 Medium onions chopped
  • 2tsp Mustard Seeds
  • 2tsp Ground Ginger
  • 1tsp Cumin
  • 1tsp Salt
  • 700ml Cider Vinegar

Mix all the ingredients in a heavy saucepan, bring to a boil and simmer over a medium heat, stirring frequently until thickened. Leave to cool for 10 mins then transfer to sterilised jars.
